The matching system will work the same even if a teacher is self-employed. The day cost will be what the teacher earns plus the Airsupply fee. All employer costs will be the responsibility of the teacher to pay from the amount requested.

The teacher will need to invoice you for the agreed amount, this could be through an umbrella organisation or directly if they work through a limited company, in any case they will be responsible for payment of tax/NI etc. You will have access to their time sheet to verify the invoice.
